The Waterfall presents a refreshed menu of Southern Italian classics by Chef de Cuisine Marco De Vincentis. An exquisite curation of celebrated favourites from the southern coast of Italy, guests may enjoy 27 new a la carte creations and six new desserts including homemade pastas, fresh seafood and Southern Italian signatures.

“Authentic Italian cuisine is created from the heart using fresh and seasonal produce that is full of flavour. At The Waterfall, we allow our ingredients to speak, selecting ingredients that complement and enhance each other and prepare our dishes with authentic methods and heirloom recipes. I draw my inspiration from the turquoise seas and lush landscapes of Naples where I was born, and translate these images into edible creations in a myriad of colour, fragrance and flavours”, says Chef Marco.
