Quality Italian cuisine is prepared with the finest natural and organic produce including seasonal vegetables and herbs, sustainable seafood sources as well as fresh and natural cuts that are free of hormones, antibiotics and other harmful chemicals. Diners can look forward to premium homemade specialties including homemade Burrata mozzarella, Chef’s special handcrafted cured meats as well as a wide range of homemade pasta made of rare organic flours such as Kamut (an ancient kind of grain, believed to have originated from Egypt) and Spelt. Roman pizzas (Laziostyle pizzas) made of flour imported from Vesuviana are baked in open fire brick oven, while Herb crusted Ocean Trout is placed on top of a piece of olive wood and fast roasted in the oven for the earthy flavour.
