Mario Caramella, originally from Milan, is a renowned and recognised chef within and outside his native Italy. In 2000, as Founder and President of the global online community, GVCI, he established a network of chefs and restaurateurs working outside Italy which today represents more than 2,000 members in 70 countries, and is recognised within the industry as a community of F&B leaders. Chef Mario has headed up the kitchens of some of the region’s most well known and awarded restaurants. In Hong Kong, he re-opened The Mistral in 1991, quickly establishing it as one of the colony’s finest restaurants. Later, he served as Chef de Cuisine at Grissini, the flagship Italian restaurant of the Grand Hyatt Hong Kong. In Sydney, he opened Al Porto at Star City Casino, and has also been Executive Chef for Hyatt Hotels in Thailand and Bali. Chef Mario arrived in Singapore in January 2011, as a chef Patron of Forlino at One Fullerton. His new venture at inITALY sees his signature style in full flight, combining authentic Italian ingredients with culinary integrity, alongside a deep understanding of the art of hospitality.
As Initaly’s resident chef, he will be one of the chefs at The Best of Italy Gala Dinner as well as the Flavours of Italy Worskhops.
